A couple weeks ago my boyfriend mentioned that I should make cannelloni and that it would be fairly easy. I found the recipe here on Dairy Goodness, picked up the ground beef, cannelloni pasta and frozen spinach I needed and got to it. Now the recipe called for a 28oz can of prepared tomato pasta sauce but I decided to make it from scratch instead.
From the Joy of Cooking, Quick Tomato Sauce
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add and cook until softened half a small onion, minced.
Stir in one 28oz can whole tomatoes, 1/4 cup tomato paste, 2 tsps dried herbs (basil, thyme, oregano etc.), 1 tsp salt.
Bring to a boil, then reduce the heat and simmer gently, uncovered for about 20 minutes, crush tomatoes into sauce.
Now the Dairy Goodness Stuffed Cannelloni recipe says 50 minutes for prep and the 45 minutes to bake. The prep took me ohhh twice as long, squeezing water out of spinach takes forever and stuffing pasta takes even longer! So of course the lovely romantic dinner I was planning was not ready in time and I was left feeling exhausted but oh my, the cannelloni was delicious. I know my mom would be proud.
