Adventures in Cooking

Recently I started cooking vegetarian meals once a week.  Usually I’m not a chef so it is nice to start figuring this out.  So far I’ve worked with tofu on each occasion.  The first night I made quite the mess in the kitchen, but each week I have the process more and more under control.  And I’ve learned that if I follow a recipe I can make something quite tasty (yay).

This is Thai Curry Tofu as found on All Recipies.

I added peppers, eggplant and served over brown rice.  P.S. Cocunut milk is so so good (and so so high in calories!).

Ingredients

  • 1 tablespoon canola oil
  • 1 (12 ounce) package extra-firm tofu, drained and cubed
  • 1 tablespoon seasoned salt, or to taste
  • 1 tablespoon butter or margarine
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (10 ounce) can coconut milk
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat oil in a large skillet over medium-high heat. Add tofu cubes, season with seasoned salt and fry until golden on all sides, stirring occasionally, about 15 minutes. Remove to paper towels, and set aside.
  2. Melt butter or margarine in the same skillet over medium heat. Add the onion and garlic; cook and stir until tender. Stir in coconut milk, curry powder, salt, pepper and cilantro. Return the tofu to the skillet. Simmer over low heat for 15 minutes, stirring occasionally.

    Yummy, I love Thai curry and coconut rice. I have a very similar recipe with chicken. Unfortunately, I have never been able to enjoy tofu, I’m a carnivore through and through.

    oh, that looks delicous! i love asian cooking.
    for being a vegitarien for about 15 years,
    preparing meals without any meat is nothing special to me.
    poor loverboy, he loves eating meat…so he has to prepare it for himself.. : )

    I love Tofu. Love love love tofu. I am a lazy girl, who typically cooks for one. I wish I could get the boy to eat it, then maybe we could have cute meals like this together.
