Recently I started cooking vegetarian meals once a week. Usually I’m not a chef so it is nice to start figuring this out. So far I’ve worked with tofu on each occasion. The first night I made quite the mess in the kitchen, but each week I have the process more and more under control. And I’ve learned that if I follow a recipe I can make something quite tasty (yay).

I added peppers, eggplant and served over brown rice. P.S. Cocunut milk is so so good (and so so high in calories!).
